THE ALTITUDE: BC SPRING
Culinary Director Alex Kim draws inspiration from his travels through Peru, where he experienced how ingredients evolve at different elevations, each altitude producing distinct flavours and products. This menu embraces that same philosophy here in BC, taking guests on a journey through the Pacific Northwest’s diverse landscapes and ingredients, moving from sea to land, mountains to plains, with each course reflecting the unique character of its origin.
